Chi-Chi-Chi...Chia! (Seeds)

With all the diet fads going around nowadays, its hard to keep up with all of the stuff that is actually good for you. Is it good for me? Is it a super food? Will it give me tons of energy? These are probably some of the questions that float around in your head... no? OK, that's just me then. Lately, with all this GMO Monsanto talk, there is also a rush on super foods. This stuff has been around for a billion years, and now, its just getting the press it deserves. A few years ago, it was quinoa. Pronounced (kin-wa) for those who still don't know how in the hell to say it. For those who have no idea what the heck it is, its a grain like seed, kinda like couscous, but more woody tasting. It originated in the Andean region of Ecuador, Bolivia, Colombia and Peru. It is an excellent source of both fiber and protein. I happen to like quinoa a lot. Guinness Beef Stew

I'm 38 weeks pregnant today. In normal people and guy talk, that's two weeks left of this baby business. Lately I feel like I'm a damn bottomless pit. I eat and eat and I'm still hungry. Then, it all catches up with me and I hate myself for the next 4 hours. Food baby plus real baby in the tummy equals nap time. My husband always invites our friends over for the UFC fights and boxing matches. Every time we have people over, everyone brings a case of beer, drinks a few and we are left with the rest at the end of the night. This sounds like an amazing deal for people who actually drink... for us, it just means we have to find a place for it. We aren't really drinkers. That being said, I have to get creative and figure out what the heck to do with all of this beer. Mexican beer is perfect for boiling chicken in for tacos. A can of Bud Light up a chicken's ass makes for some delicious Beer Can Chicken. Guinness.... well, now... there is something to be pondered....

I LOVE TACOS!

If you know me, you know that I'm a serious taco connoisseur. I love tacos. I don't discriminate either. Well, unless its something weird like lengua or cabeza. I know, I know.... It's all a mental thing to me though. I just can't bring myself to do it. Growing up, I have never really been a fish person. As an adult, I tried really hard to incorporate fish into my diet. I started out with mild fish like  Tilapia or Cod  then moved on to stronger, richer fish like Salmon. I am still a little bit picky about the way they are prepared. I really only like the way that I prepare Salmon. I like it broiled in the oven with a honey mustard glaze or grilled on the bbq. Mmm! Delicious! However, is seems like the grocery stores are carrying a bigger variety of fish now. A new one that I like is Swai or Basa . If you have never tried it, give it a go. Best damn pulled pork sliders

There are few things I love more than BBQ. I am the bbq master in my house. My husband, bless his heart, is a great cook, but he is rarely allowed in my kitchen, let alone near the grill. I'm a control freak. I like things the way I like them, and that is that. Don't feel sorry for him. He has gained 30 lbs in the 3 years we have been together. He is WELL fed. The one thing I love just as much as my grill is my Crock Pot. I have two regular sized crocks and a mini one for dips and such. I love the heck out of those things! I make a lot of roasts in my crock pot. My favorite is pork. I love how the low and slow cooking makes the meat happy, and it just falls apart.  God I can't wait until this head dissipates. As my belly grows, I feel like I am melting into a big blob of baby. I'm 27 weeks pregnant today. Its the second week into October which means only a week or so left of this heat business, and I have 13 weeks left of the baby business. OH! And I have 6 days left of being 31. I still can't believe that in less than a week, I will be the same age as Honey Boo Boo's mother. I shudder at the thought.   Is this what the new 32 looks like?   There isn't much more that comforts me than a nice thick, creamy bowl of cheddar and broccoli soup. I love soup. Soup is the ultimate comfort food. I had a friend once tell me that 'soup was nothing more than food and water'. Well, technically, yes. If you want to put it that way, soup is food and water. However, soup can also be a glorious masterpiece in a bowl. I love a nice big bowl of soup, stew or chili on a cold day. Heck, I love soup on a hot day...

Holy Meat Sauce, Batman!

In my last post, I promised you guys a recipe for the little culinary delights known as meatballs. Grandma is really good at making meatballs. She is also really good at braciole (the word is commonly pronounced /bra'zhul/ from the Sicilian language). Braciole is one of my favorites. Its pretty much just as simple as making a meatball, but I usually save them for special occasions. If you don't know what they are, let me enlighten you. Braciole are basically little roulades made with beef round steak and filled with spices, cheese and a secret center- a hard boiled egg. If you don't really like egg, you can just pick it out at the end, or you can stuff it with something else like a sausage. Ive never stuffed it with a sausage, but what could be bad about stuffing meat with more meat? Nothing. Exactly!
